Tomato and Cashew Nut Dip

Lovely on an antipasto platter or in a sandwich with lots of greens.

  • 8 sun dried tomatoes, sliced
  • ½ red capsicum, chopped
  • 1 cup cashew pieces, soaked overnight, drained and rinsed
  • Several stems fresh coriander, chopped
  • Small handful of mint leaves
  • 2 cloves garlic
  • 1 tsp chilli sauce
  • ½ tsp sea salt

Blitz the whole lot in a food processor or blender!
