Summer Slaw

Makes 4 portions

  • 1 carrot, peeled, grated
  • 1⁄4 Mouli, peeled, grated
  • 2 large spring onions, finely sliced – I used red onions in place of this
  • 1 Granny smith apple, cut into fine julienne
  • 1 garlic clove, crushed
  • 2 tbsp olive oil
  • 1⁄2 lemon, juice only
  • 4 fresh basil leaves, torn
  • 2 tbsp chopped fresh mint, shredded
  • salt and freshly ground black pepper
  • Chopped fresh chives, to serve

In a large bowl, combine all the ingredients well, dress with the oil and lemon and season to taste.
