Makes 4 portions
- 1 carrot, peeled, grated
- 1⁄4 Mouli, peeled, grated
- 2 large spring onions, finely sliced – I used red onions in place of this
- 1 Granny smith apple, cut into fine julienne
- 1 garlic clove, crushed
- 2 tbsp olive oil
- 1⁄2 lemon, juice only
- 4 fresh basil leaves, torn
- 2 tbsp chopped fresh mint, shredded
- salt and freshly ground black pepper
- Chopped fresh chives, to serve
In a large bowl, combine all the ingredients well, dress with the oil and lemon and season to taste.
