Really Great Tomatoes

Serves 2-4

Gorgeous with toasted pinenuts or fried halloumi

  • Some ripe toms (any size)
  • 1/2 garlic clove, finely chopped
  • Pinch of salt and freshly ground pepper
  • Pinch of ground cumin and a speckle of chilli powder
  • Glug of olive oil
  • Handful of fresh mint and coriander (basil if you wish)
  1. Halve or slice the toms. Add the garlic and spice.  Mix well so the tom juice makes a dressing.
  2. Add a glug of olive oil and the herbs and let it sit at room temp for up to an hour or store in the fridge for up to a day.
