Quick and Easy One Pot Chicken

Chop 2 large onions and garlic and throw in a big pan and brown

Add chicken thighs or breasts and brown

Add salt , jalapenos, capers,olives,bay leaf , basil any herbs you like…

When browned add a tin chopped tomatoes, bring to boil then turn heat down cover and simmer for about 1 hr

Serve with a mixed leaf salad!
