The first meal of the day is the most important. But do you make time for it? Do you even bother?

Long term sustainable fat loss is about balance hormones. Eating a good protein and fibre based breakfast means you have a much better chance at managing this throughout the day. If you start the day with wildly imbalanced metabolic hormones then the rest of the day will feel much more difficult and fat loss will be impossible.UGG

I love things you can make up in advance and freeze such as the Ugg Foods cakes and breads you can make using their mixes (which freeze perfectly) or these fat controlling pancakes which are easy to make and store too!

This is a recipe adapted from an original source I can’t find. The coconut flour can be quite dry so will absorb lots of the liquid so it doesn’t keep so well uncooked.

I have mine with a berry compote and a lovely cup of fat burning green tea. Then I really am set for the day!

Paleo Coconut Pancakes and berry compote

Ingredients:

1/2 cup coconut flour
1 teaspoon baking powder
6 large eggs
1/4 cup coconut oil (place jar of oil in a bowl of hot water to melt)
1 cup light coconut milk
Extra coconut oil for cooking

Directions:
  1. In a mixing bowl, blend together all the ingredients using an electric mixer or good blender if you have one.
  2. Cook in a skillet or good non-stick pan with oil as you would with any pancakes.
  3. Serve when nicely browned and cooked through.

Sometimes the mixture can be dry so simply add some more milk to improve consistency. Serve with a warm berry compote

For the compote:

Take a cup or two of frozen berries. Add a tablespoon of xylitol and gently warm through. Serve with a dollop of greek yoghurt if desired.
