Serves 4

INGREDIENTS
1 red onion in wedges
2 courgettes in chunks
2 peppers (1 red and yellow in chunks)
2 tbsp homemade pesto
8 lean sausages (Italian or use Italian herbs) – you could use vegetarian here

300g cherry toms
Handful of fresh basil

METHOD
Toss all the vegetables in the pesto and season
Spread in a roasting tin.
Arrange the sausages over the top and cook in a preheated oven Gas 5 for 25 minutes
Add the tomatoes and drizzle with olive oil, cook for a further 10 minutes.

Could serve with salad, sweet potato gratin or green beans for example or raw courgette spaghetti
