At first I couldn’t get my head around drinking my meals. Now and again a protein smoothie bowl is great don’t get me wrong but I like to eat and chew my food so I was unsure on how to utilise this really good solution for busy people.

So I found a solution! YES I turned my Huel mix into solid food. I found two great ways to turn this complete food into a solid food I could chew. Pancakes and muffins! So here are two great recipes for those that like to savour their food for satiety and they are VERY filling so perfect for fat loss and fat controlling.

I just simply add a variety of ingredients such as cinnamon, baking powder, eggs, coconut or almond milk, xylitol cocoa and cook in the oven or pan. I love simple!

Huel Berry Muffins

You need a silicone muffin mould ideally. This recipe serves 1 but you can double the recipe to make a batch.

Ingredients:

1 scoop of Huel (vanilla flavour)

2-3 eggs beaten

1/2 tsp baking powder

1/2 tsp cinnamon

1 tbsp cocoa powder

1 tsp xylitol (optional)

You may need a splash of your chose milk if mixture is too thick to pour.

1 handful of frozen berries

Method:

Mix all the ingredients well with the egg (except the berries). Add the berries to the muffin mould and pour the mixture on top. Bake for 15-20 minutes in the oven on 160c.

Huel Berry Pancakes

You need a good non-stick pan. This recipe serves 1 but you can double the recipe to make a bigger pancake. If you add the berries it takes slightly longer to cook. It works really well with banana too!

Ingredients:1 scoop of Huel (vanilla flavour)

2-3 eggs beaten

1/2 tsp baking powder

1/2 tsp cinnamon

1 tbsp cocoa powder (optional)

1 tsp xylitol (optional)

1 handful of frozen berries

You may need a splash of your chose milk if mixture is too thick to pour.

Method:

Mix all the ingredients well with the egg. Add the berries last (or to cook quicker, make into a compote and add when serving). Melt coconut oil in the pan and heat on medium. Pour in the mixture and place a lid on top. Leave for 5-10 minutes and keep checking. When solid enough, turn it over and repeat on the other side.

Leave to cool or eat straight away and serve with Greek yoghurt,. It keeps well and so makes a great snack for on the move.
