Harissa Spiced Chicken, Mango

For the chicken:

  • 2 chicken thighs
  • 3 tbsp natural yogurt
  • 1tsp harissa paste
  • 1tsp cumin seeds
  • Juice of ½ lemon

In a mixing bowl add the yogurt, harissa paste, toasted cumin and lemon juice and mix together

Portion the chicken then add to the bowl and rub with the marinade

Leave the chicken for at least 2 hours

Place in a baking tray and cook in the oven at 220ºC gas mark 7 for 25minutes


For the salsa

  • ½ mango
  • ½ red onion 1/2
  • ¼ bunch coriander
  • ¼ chilli
  • 1tsp honey or Xylitol
  • 1 lemon
  • 1 tbsp olive oil

Chop the mango, onion and chilli into small dice and put in a mixing bowl.

Finely chop the coriander and add to the bowl.

Add the honey, squeeze of lemon and olive oil then mix together

Season to taste
