Gorgeous Pink and Green Salad

Serves 2-4

  • 1 beetroot, peeled and coarsely grated
  • Bag of watercress
  • 1 lemon, zest and juice
  • Glug of olive oil
  • Glug of balsamic vinegar
  • Sea salt and freshly ground black pepper
  1. In your salad bowl, make a dressing of oil, vinegar, lemon zest and juice.
  2. Add the watercress.  Mix then the beetroot.
  3. Season with salt and pepper, mix, taste.
  4. Add more of dressing stuff until it’s just right.

Amazing on it’s own or add some feta and watermelon!  or goats cheese and orange segments!!!  or serve with a gigantic steak!!!!
