Super clean ginger, carrot and walnut loaf:

Makes 1 loaf:

125g Almond flour

100g gram flour

1 level tsp of bicarbonate of soda

2 tsp ground ginger

1 tsp cinnamon

2 large carrots, peeled and grated (courgette works too)

100ml melted coconut oil or 150ml non extra virgin olive oil

80g Xylitol

100g stem ginger very finely chopped

2 large lightly beaten eggs

100g chopped nuts

Preheat oven to 150c

Add flours, bicarb and spices to mixing bowl

add the grated carrot, oil, xylitol, ginger, eggs and nuts. Stir until mixed well and place into a silicone mould

bake in the centre of the hot oven for 60 to 75 mins or until it feels firm.

Leave to cool and place in airtight container.  Suitable for freezing.
