Meaty Mediterranean Loaf
This was adapted from one of my VIP Fat Controllers. Thanks EBS! This makes a fabulous family meal with salad or steamed vegetables. It keeps well in the fridge too. I always advocate organic grass fed beef mince where possible. This ensures good quality fat from the animal with less toxins in. It will also have a higher content of essential fatty acids. To make it go further you could substitute more of the meat for other vegetables such as mushrooms, courgettes and carrots.
Ingredients:
Preheat your oven to 180c.
500g lean organic beef mince
2 small onions finely diced
1/2 sweet potato peeled and grated
2-3 cloves garlic chopped and crushed
1/2 chopped fresh chilli
2 tblsp Worcestershire sauce (Tamari sauce works well)
1/2 pack of cubed feta cheese
1 handful of chopped fresh basil
5-6 diced sun-dried tomatos or 1 tblsp of tomato ketchup
Sea salt & pepper to season
Instructions:
Using your hands, mix well together in a bowl.
Place the mixture in a greased loaf tin. Make sure it’s firmly pushed down and the bake for about 40 mins.
Slice and serve with salad, hot or cold. Delicious!!
