Serves 2


1-2 medium size courgette
1-2 medium size spring onion
2 large eggs
Sea salt to taste
Pepper to taste
2 tablespoons coconut oil for frying

(I like to add a little fresh chili for an extra kick and you can add all sorts of left over veg – grated sweet potato works too


Grate courgette into a small bowl.
Finely chop  spring onion and mix with the courgette. Combine the large eggs into the bowl and mix thoroughly adding salt and pepper to taste.
Heat oil in frying pan and spoon 3 mounds of the courgette mixture into the pan and fry until lightly browned, pressing down to flatten. Flip pancake till browned on both sides
