Banana and cinnamon omelette

  • 2 eggs ( for a more substantial omelette use some egg whites too)
  • 1⁄2 Banana
  • 1 heaped teaspoon ground cinnamon
  • 1 tblspn of ground flax seeds
  • 1 tblspn coconut oil

Mash the banana and cinnamon together in a bowl, add the eggs, cinnamon and flaxseeds and mix well. Heat the oil in a thick bottomed sauté pan over a high heat Add the eggs and stir quickly until the egg mix has just set, turn the heat to low, place a lid on and continue to cook for a further 1 minute (more if you like your egg firmer)

For a pancake, blend the mixture to form a smoother batter. Add a little more banana or add some flax to thicken and cook like a pancake!
